Dan Probyn—Head Brewer

BIG CHOMP

At Fierce we’re well known for our dark beers, this is a re-brew of one often requested by fans, and we think we’ve done it justice. We ran a 4 hour boil on this stout to enhance body and sweetness resulting in a thick, luxurious, and complex stout loaded with chocolate and caramel.

SUGI

My personal favourite release of the year – a beaut in its simplicity. Brewed using flaked rice, and Crisp’s fantastic heritage Hana malt, this Japanese rice lager was then infused with cedar wood spirals. The result is a super pale and super dry lager with a lovely clean, crisp and bready profile,  and a subtle touch of earthy/spiciness from the cedar wood.

VERY BIG JUICE

A culmination of all our Hazy IPA learnings, and Fancy Juice’s big brother. We took the base Fancy Juice recipe, dialled everything up, and threw in some Cryo Pop for good measure. This beer’s awesome – thick, juicy, bittersweet and packed with ripe tropical fruit, fresh stonefruit, and citrus peel.

VERY BIG MOOSE 2025 - RYE BA RASPBERRY & COCONUT

A variant on our signature VBM imperial stout aged in rye whiskey cask for 6 months. We were delighted with how all our VBM variants turned out this year. This one features the return of one of our favourite combination. Delivering flavours of dark chocolate liqueur, raspberry ruffle and coconut snowballs.

FANCY JUICE

Over the past couple of years we’ve been working hard to dial in our hazy IPA game, and this beer highlights that very well. Consistently one of our best sellers, and consistently fantastic. Using the tried and tested combo of Citra, Galaxy, and Mosaic, Fancy juice is a soft and juicy hazy bursting with tropical and stone fruits.

FIERCE IPA

A favourite amongst the brewers here, lovingly referred to in house as FIPA (feepa). This crisp and juicy West Coast style IPA is super approachable – low in bitterness, with loads of citrus and stone fruit aroma and a touch of caramel sweetness.
